Gradient Bar
White Chocolate and Matcha Namelaka

White Chocolate and Matcha Namelaka

15 min

The meaning of the name of this unusual Japanese dessert is "very creamy", and it really is.
This dessert is eaten with a spoon and its structure is something between ganache and mousse. In addition to the inevitable chocolate and cream, it also contains milk and gelatin, and has a significantly lighter structure than ganache.
The recipe is very simple and does not require more than 15 minutes to prepare, and it will only take a few hours to cool.

Ingredients for 6 people:

170 g of white chocolate

100 ml of whole milk

200 g of whipped cream

1/2 bag of dry powdered gelatin

1 teaspoon of Materia matcha powder

STEP 1

Break the white chocolate into cubes, place in a bowl and melt in a microwave.
NEXT STEP

STEP 2

In another pan, bring the milk to a boil, then add the powdered gelatin and mix well.

NEXT STEP

STEP 3

Pour the hot milk mixture over the melted chocolate, stirring constantly until the milk and chocolate are mixed into an even mixture.

NEXT STEP

STEP 4

Let the mixture cool a little, then add the sifted matcha powder and the whipped cream.

NEXT STEP

STEP 5

Emulsify the mixture with a stick mixer, by keeping the mixer at the bottom of the container and not moving it up and down, so that bubbles do not form.

NEXT STEP

STEP 6

Pour the mixture into molds and refrigerate for at least 6 hours.

NEXT STEP

STEP 7

When cooled, serve with berries and enjoy.
